Chef Joseph Martin started AngelFire7 BBQ, LLC because of his passion for putting flame to meat. That passion started at an early age when he would watch his dad cook steaks on the grill. He says, “I can still smell and hear those steaks sizzilin’ to this day!”

Now, fast forward to 1996 in Texas where he bought his first in-ground natural gas grill. That grill is where he learned how to slow-roast a Standing Beef Rib Roast – a specialty of his. Grilling was great and life was good but he started to see smokers here, there, and, pretty soon, everywhere. A neighbor had a small Brinkman smoker that he wasn’t using very often and offered to let Joseph use it. That small gesture turned into rib-cooking contests or “rib-offs” with some of the neighbors. Pretty soon they were having neighborhood parties where they would cook large quantities of food for holidays, special events, or for no reason whatsoever other than to cook.

After returning to Georgia in 2005, the Lord continued to bless Joseph and he was able to sharpen his culinary skills over several years by experimenting on family and friends with various sauces and cooking techniques. In 2010, he won 1st Place in the “People’s Choice” category at a local chili cook-off. That win sparked a flame that he could no longer ignore. Joseph finally purchased the materials to build a “real” smoker and enlisted the welding skills of Steve Rapp. Together they designed and built a small trailer smoker and the rest, as they say, is history…

Fast forward again to 2013. The Lord continues to bless Joseph and he took first place in Pork Butts at a July 2011 competition in Savannah using an unfamiliar smoker and a crew he’d never worked with before. AngelFire7 BBQ has expanded their smoker fleet to include a Southern Pride commercial unit on a trailer which they use for larger catering events and their Professional BBQ Competition Team “Smokin’ for You”.

Today, they have added “Thelma Jean” to the team! TJ is a 2003 Freightliner MT55 custom chassis that started life as a mobile dialysis unit. She is equipped with a complete 160 sq. foot commercial kitchen, 12kw diesel genset, 2-15K BTU roof a/c units, air ride suspension and auto leveling system. Look for Thelma Jean on the road!

Stopped by this food truck for the first time last night at Canton's First Friday. Line was long so that was an indication to me that the food might be good, and indeed it was. While the wait was long, it was worth it. I enjoyed a quesadilla filled with brisket and cheese. Yum! I also tried their mac and cheese, as I love cheese...again yum! Very friendly service and delicious food...no complaints! Highly recommend!

First time I had this food. I was at the Kennesaw farmers market and they were set up in the back with the food trucks. I just happen to be craving some barbecue my mouth was having a party eating the sandwich it was so good.
